
Bright vibrant red/purple colour. Lifted aromas of raspberry, spices and hints of vanilla bean. The palate is lively and fresh, medium balanced with complex flavours of bright sour cherries, ribena and hints of toasty oak on the finish. The tannins are fine and smooth that give the wine a beautiful supply/juicy length. The Cabernet flavours dominates in this wine but the softness of the Merlot rounds off the palate creating a well balanced wine.
The Cabernet and Merlot is hand-picked and de-stemmed into separate open top fermenters where it undergoes extended cold soaking prior to fermentation. Regular hand plunging is undertaken to extract colour and tannins. The wine is then pressed to french oak barriques where is matures for a minimum of 8 months prior to bottling. We then blend the two varieties together to make the best blend.
This wine is made to enjoy upon release however it is expected that it will continue giving excellent flavours at 4 to 6 years of age, assuming satisfactory cellaring continues.
