Pale straw in colour with lively fine bead. Bouquet of crisp granny smith apples and citrus. Fresh lively palate of green apple and lemon with hints of honey toast biscuit.
Whole bunches of hand picked fruit are gently pressed to ensure delicate flavours. After primary fermentation the wine is tiraged with no malolactic fermentation and disgorged after 12 to 18 months on yeast lees to retain crisp, fresh flavours.
Will further develop with bottle age to exhibit more savoury and complex characters, whilst retaining the crisp citrus driven fruit characters.
“Balmain Bugs” or Natural oysters.
Alc: 12%, pH: 2.91, TA: 7.2g/L
