
Vibrant red colour with darker under tones. Ripe lifted cherry notes complemented by smoky coffee oak characters. The palate is long with spicy fine soft tannins. Fruit is dark and ripe with well integrated French oak giving good structure and length.
One portion of Pinot Noir was hand picked and gently destemmed before fermentation in tank, the second portion was also hand picked and gently destemmed with minimal berry breakage and placed in a small batch open top fermenter, with regular plunging to immerse the skins and extract colour and tannin as gently as possible. After ferment both portions went through malolactic fermentation, portion one in tank and portion two in French oak barriques, and was matured for nine months prior to bottling.
Drink on its own or with a meat based pasta dish, veal or crispy duck.
